Mummy Blogger Makes | raspberry & coconut muffins

The festive season is amongst us and we are having more and more spontaneous visitors drop by for a chat and a coffee. If your anything like me you are generally unprepared and don't have anything to offer them just "hanging around". 

Today I whipped up these raspberry and coconut muffins with the staples I had in my cupboard fridge and freezer! 


Ingredients: 
2 cups of Self Raising flour
3/4 cup of caster sugar
3/4 cup of coconut
3/4 cup of milk
2 eggs
60 grams of melted butter
1 cup of raspberries (I used frozen) 
white chocolate or icing sugar (optional)
*to serve

Method:
Add flour, sugar and coconut to a mixing bowl, combine and form a well in the centre. 
Mix together milk, eggs and butter then add to mixing bowl. Stir with a metal spoon and once all ingredients are combined fold through raspberries. 



Bake on 150 for 25 minutes !
