Okay so I need to admit this isn't really a mummy blogger makes but more of a daddy does some duties
Shane made dinner the other night, home made chicken nuggets, salad and potato gems. 
The hero being these little babies here.

They were super quick easy and yummy! We shallow fried ours, so probably not the healthiest of options but hey you could oven bake them! 

All you need is chicken breast sliced or fixed to your desired size, egg and the crumb! 
The crumb is the fun part! This is where you can twist it all around and add your own feel. We seasoned the breadcrumbs with lemon and garlic salt, all seasoning and lemon pepper. 

Done simple easy. Bam closest thing to popcorn chicken I have had in my home.

Mummy Blogger Makes | Julia's Album one pan dinner

Tonight I made a "One Pan Meal" from Julia's Album. Chicken and Bacon pasta with spinach and tomatoes in a garlic cream sauce! 
My mouth actually begins to drool just by writing this... You can find her recipie with step by step images via the link below. This is also an image from her webpage. I know this isn't the normal mummy blogger makes type of post because it's not my own recipie but it's too yummy to not share with you all!

As you can see below, my pasta doesn't look as scrumptious as above... But it tastes bloody awesome! Mr Charlie had a second helping. We used shell pasta instead of penne, and as I'm in Australia I used cooking cream rather than the American product half half. 
It really could be an easy regular week night meal in my house. I would double the spinach next time but that's just personal preference (:

MUMMY BLOGGER MAKES | choc chip cookies

The best part of making choc chip cookies is the dough right?! Well now you can feel guilt free with this eggless recipie. If your like me raw eggs never scared you away anyway....

I stole this recipie off my sister inlaw who once stole it off another lovely lady. But who cares about details, I can currently smell these cooking away in my oven and I just need to share this treasure with you! 

Ingredients: 
2.5 cups of Self Raising Flour
.5 cup of Sugar
1 can of condensed milk
1 bag of choc chip bits
250 grams of butter 

MIX IT ALL TOGETHER ✌️
ROLL INTO BALLS AND FLATTEN
BAKE FOR 15 mins on 170 or until cooked to your desired tastes. I like mine gooey and soft still! 


Mummy Blogger Makes | creamy-cheesy chicken bacon and mushroom pasta bake

It's freezing cold, I have to go out at 5.30 and we will be all home smack on dinner time. I want something quick easy and that I can prepare now and finish off as we walk in the door. 
Welcome to my staple dish. 
Normally we don't add mushroom but tonight we do! That's the beautiful thing about the things I try to show you mummas, you can add almost anything you have in the fridge! 


All you will need is: 
Dolmino three cheese pasta bake sauce 
Chicken Breast
Bacon 
Pasta

You could add 
Spring onion
Mushroom
Tomato 
Or anything you have lying around! 

Whilst the pasta is boiling, fry off the chicken and once it starts to cook add the bacon and any other extras. 

Drain the pasta, stir through sauce, chicken and bacon. 

Top with cheese and bake until golden. 


Mummy Blogger Makes || Nutella Muffins

It was a Sunday afternoon at home with my little babe. He was restless and I wanted to do some sort of activitie with him. We attempted painting..... Let's just say we won't do that again. So we decided to bake, that way if he did put substances in his mouth I wouldn't have a heart attack. 

These 3 ingredient Nutella muffins are so easy to make! A perfect afternoon treat for your little mr or miss and scrumptious with a coffee or tea for yourself. 

Ingredients
• 3 EGGS
• 1 CUP plain flour
• 1 1/2 CUPS Nutella 

Method
• stir eggs into Nutella, this might take a little but of work but it will turn into a smooth shiny mixture.
• gently fold through flour, the less you mix the fluffier and moist the muffins will be! 
• add mixture to muffin tins and cook for 15 mins on 180*c

NOTE || once the muffins begin to crack on top and spring back when touched, they are ready!

As you all know Friday I'm attending a Melbourne market so hopefully this is a quick easy and super yum meal for me to throw together once I'm home (: 


The Sweet Mama Life’s Easy Weeknight Pie


I’m no Martha Stewart. In fact, I’m probably the exact opposite! Our house is clean, but always untidy; I always manage to find a way to get lint on the washing; and I can’t cook to save my life. So I love it when I find a recipe that I can actually cook AND tastes delicious AND is a cheap weeknight meal for a family on a budget with a new baby. Easy, cheap, and delicious – who doesn’t love that!? The other thing I love about this recipe is that you can mix it up and add whatever ingredients take your fancy. I have provided the basic pie recipe with a few examples of how you can mix it up, but the choices really are endless!



Ingredients:


1 tablespoon vegetable oil
1 large brown onion, finely diced
500g lean beef mince
125ml (1/2 cup) tomato sauce
60ml (1/4 cup) Worcestershire sauce
60ml (1/4 cup) boiling water
1 egg, lightly whisked
1 sheet of frozen puff pastry, thawed.  

Method:

Preheat oven to 200°C.

Heat oil in a frying pan over medium-high heat. Add onion and cook, stirring, for 2 minutes.

Add mince and cook, stirring to break up lumps, for 3 minutes or until it changes colour.

Add tomato sauce, Worcestershire and 60ml (1/4 cup) of water and cook for 5 minutes or until sauce thickens.

Divide among four 300ml ovenproof dishes or ramekins.

Cut puff pastry to size and place over top of ramekin, pressing sides down gently with a fork. Brush with egg. Make a slit in the pastry top with the point of a knife. Bake for 25 minutes or until golden brown.


Mix it up!

Serve pies with mashed potato and steamed vegetables for a healthy and hearty meal.

Add grated carrot and zucchini to the mince mixture for an extra dose of hidden nutrients for those fussy eaters.

Add some bacon when cooking off onion, and a layer of cheese between the meat and pastry for some cheese and bacon goodness.

Scrap the pastry and top your pie with some creamy mashed potato for Shepherd’s pie perfection!

Cook 300g frozen baby peas until soft and mash with a dollop of butter for those that love their pies with mushy peas.

We had a little name game on Instagram the other night to decide what to call this weekly post. The chosen name came from a sweet little IG account @thesweetmamalife. 

The first installment of mummy blogger makes will be..... 

Wild Organic Blackberry Pancakes


Let me tell you a little background info! We live on an organic dairy farm. So a downfall to being organic is that we can't use any sprays to remove the fast spreading and growing blackberry bushes! But I've turned this into a positive ;) 
A few days ago my little babe and I went for an afternoon walk all around the farm, picking blackberries! 
For dessert that night we made pancakes and this was the first recipie I included them in. 
It was AMAZING! 


INGREDIENTS 
1 cup of Blackberries
1 3/4 cup of Milk
2 Eggs
1 teaspoon of Vanilla Essence 
2 cups of Self Raising Flour
1/3 cup of Caster Sugar


METHOD
Whisk milk, eggs and vanilla together in a jug. 
• Sift flour into a bowl and stir in sugar. Make a well in the centre. 
• Add wet ingredients. Mix until combined. Then fold in blackberries. 



• Cook pancakes to your preferred liking! I always use butter to cook pancakes because we like that crisp golden crunch on the outside! 
• Top with some more fresh blackberries and a little vanilla Icecream and wallah!
